We often write our blogs related to wedding food, ideas and meals on the actual wedding day so we thought what about the run-up to the wedding?

It is very common to have a family get together before the big day so friends and family from both sides of the couple can meet and have a laugh prior to the big day. So what about food. Fear not we have you covered. We also cater for events like this. Here are a few little recipes ideas we have compiled that are simple and stress-free.

Goats Cheese Mushrooms
24 baby portobello mushrooms (about 1 pound), stems removed
1/2 cup crumbled goat cheese
1/2 cup chopped drained roasted sweet red peppers
Pepper to taste
4 teaspoons olive oil
Chopped fresh parsley

Preheat oven to 375°. Place mushroom caps in a greased 15x10x1-in. baking pan. Fill each with 1 teaspoon cheese; top each with 1 teaspoon red pepper. Sprinkle with pepper; drizzle with oil.
Bake 15-18 minutes or until mushrooms are tender. Sprinkle with parsley.

BBW Chicken Bites
6 bacon strips
3/4 pound boneless skinless chicken breasts, cut into 1-inch cubes (about 18)
3 teaspoons Montreal steak seasoning
1 teaspoon prepared horseradish, optional
1/2 cup barbecue sauce

Preheat oven to 400°. Cut bacon crosswise into thirds. Place bacon on a microwave-safe plate lined with paper towels. Cover with additional paper towels; microwave on high 3-4 minutes or until partially cooked but not crisp.
Place chicken in a small bowl; sprinkle with steak seasoning and toss to coat. Wrap a bacon piece around each chicken cube; secure with a toothpick. Place on a parchment paper-lined baking sheet.
Bake 10 minutes. If desired, add horseradish to barbecue sauce; brush over wrapped chicken. Bake 5-10 minutes longer or until chicken is no longer pink and bacon is crisp.

Apple and Brie Skewers
2 medium apples, cubed
1 log (6 ounces) Brie cheese, cubed
1/2 cup hot caramel ice cream topping
1/2 cup finely chopped macadamia nuts
2 tablespoons dried cranberries

On each of six appetizer skewers, alternately thread apple and cheese cubes; place on a serving plate. Drizzle with caramel topping; sprinkle with macadamia nuts and cranberries
