Ok, this warm weather has gone to our heads and the Arbutus Catering team are thinking about all things summer, even the drinks. Maybe we are being a little optimistic just yet with the typical Northern Irish weather, but here goes, we thought you could do with a little Summer drinks prep. 

Cucumber-Lemonade Mocktail

A super-thin slice of cucumber pressed against the glass adds an artistic twist to this refreshing cocktail
Ingredients
1 paper-thin, lengthwise slice of European cucumber, for garnish
Ice
1/4 teaspoon finely chopped dill, plus 1 dill sprig, for garnish
1 tablespoon agave syrup
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
1/4 cup fresh cucumber juice (see Note) 
1/4 cup chilled club soda
 
How to Make It
Press the cucumber slice against the inside of a chilled highball glass and add ice. In a cocktail shaker, muddle the chopped dill, agave syrup, lemon and lime juices and 1 tablespoon of water until the syrup is dissolved. Add ice, then add the cucumber juice and shake well. Strain into the prepared glass and stir in the club soda. Garnish with the dill sprig.

Mango Peach Sangria


Serve this light, sweet, fruity white-wine sangria over plenty of ice cubes for the perfect summer drink. 
Ingredients
1/4 cup mint
1 cup Grand Marnier
2 peaches, cut into thin wedges
1 bottle Viognier
1/3 cup water
1 mango, chopped
1/3 cup sugar 

How to Make It
In a saucepan, cook the sugar and water until the sugar dissolves; transfer to a pitcher and refrigerate until cold. Stir in the Grand Marnier, Viognier, mango, peaches and mint and serve over ice.

Tabernacle Crush


This light and refreshing cocktail is as reminiscent of the American South as it is of the South of France.
Ingredients
1/2 large peach, sliced
6 small basil leaves, plus more for garnish
1/2 ounce fresh lemon juice
1 1/2 ounces gin
1 ounce Lillet
1/2 ounce simple syrup
Ice
Club soda 

How to Make It
In a tall glass, muddle the peach with the 6 basil leaves and the lemon juice. Add the gin, Lillet and simple syrup. Add ice cubes and top with club soda. Garnish with basil.
